Ingredients

  • 1/2 can of organic pumpkin purée
  • 1/3 cup cassava flour
  • 1/3 cup almond flour
  • 1tbs avocado oil
  • 3 eggs
  • 1 tbs pumpkin pie spice
  • 1tsp cinnamon
  • 1tsp vanilla extract
  • 1/8 tsp baking soda
  • 1/8 tsp baking powder
  • 1/8 tsp sea salt
  • 1 tbs grade B maple syrup or stevia to sweeten
  • Grass-fed butter to cook in

Directions

  1. Heat skillet to low to medium heat.
  2. Combine all ingredients in a large bowl until smooth.
  3. Add butter to pan to coat.
  4. Pour 1/3 cup of batter to form pancakes.
  5. Cook until bottom is a little brown, then flip.
